apricot chilli chicken

Spicey and fulfilling 🙂

**Pre-heat oven to 160*C

– 500g of chicken breast, thigh or pieces
– 1 can of apricot nectar
– 1 large onion
– 1 large red capsicum
– 3 teaspoons of crushed chilli
– 2 teaspoons of crushed garlic
– salt and pepper
– olive oil

1. In a moderately hot pan, brown chicken, capsicum, and onion in garlic and chilli.
2. In an oven proof dish cover chicken with apricot nectar.
3. Bake in oven until chicken is cooked thru.

– Serves 4+ – Great with coconut or jasmine rice.
