aussie meat pies

I was recently given a 2nd hand pie-maker from my mother-in-law, and I must say, what a fabulous machine 😀 Its super quick, and easy and there are so many fillings to make. I thought I should post this in time for Australia Day 😉

– puff pastry
– shortcrust pastry
– 500g lean beef mince
– 1 onion, chopped finely
– 3/4 cup of beef stock
– 1 1/2 tablespoons of cornflour
– 1 (heaped) teaspoon of vegemite
– 1 tablespoon of tomato paste
– 1/2 tablespoon of BBQ sauce
– 1-2 tablespoons of oyster sauce
– 3 tablespoons of worcestershire sauce
– olive oil
– salt and pepper

1. In a medium-hot pan, saute onion until soft. Add mince and brown.
2. Whisk together 1 tablespoon of stock with the cornflour until it forms a thick goo. Then add the rest of the stock and mix until combined. Add this stock, and all sauces including vegemite to the mince. Don’t forget to season to your taste. Also people like their mince mix differently, so if it needs changing – nows the time.
3. Bring to the boil, reduce the heat and simmer until thickened. Let this cool down 🙂
4 Meanwhile, cut circles out of the puff, and with the shortcrust pastry, cut a slit at each quarter one inch long – then fold this in on itself to form a pie base. Pre-heat pie maker.
5. After 5-6minutes, lay one circle of the shortcrust pastry down as the base, then place 1/3 cup of beef mixture inside. Place a puff lid on top and continue until the pie machine is full. Close the lid and cook until the lids are a golden-brown colour 🙂
6. Repeat until you have used all your beef mix.

– Makes approx. 12 pies.
– You could replace the mince mixture with a beef, red wine mushroom filling or goats cheese, semi sun-dried tomatoes and chives.. The possibilities are endless. Pies are awesome for Australia Day, lunch or dinner and can be frozen for another date.
