So simple and easy 🙂 Tasty and Delish.
**Pre-heat oven to 200*C
Ingredients
– 1 large sweet potato
– red wine vinegar
– olive oil
– salt and pepper
– 1/2 teaspoon of ground cumin seeds
1. Using a vegetable peeler, peel the whole sweet potato into thin strips.
2. In a small bowl, add a drizzle of red wine vinegar, cumin, and a good slurp of olive oil. Mix well
3. Coat all the sweet potato in the dressing, and place on a tray and pop in the oven for 10-15minutes until they start to sizzle. After this time, pull them out, and move them around and chuck ’em back in the oven again for a further 15minutes, until they start to become a beautiful golden brown colour.
4. Place them in a bowl and season with a little salt and pepper. Serve warm 🙂
– Serves 1, I find sweet potato shrinks in the oven, so if you want more chips for one person, add another sweet potato, or try pumpkin ??
Yoghurt and Garlic Sauce
Ingredients:
– tub of natural yoghurt
– 3 cloves of garlic
– 1 tablespoon lemon juice
– salt and pepper
– olive oil
1. Combine all ingredients in a bowl and mix well. Chill and then serve.
– Makes 1 cup. Sauce is good with chips, fish and falafels 😀
