Ingredients
– 2 long red chillies, sliced finely
– 1 garlic clove, peeled and chopped super finely
– 1 tablespoon grated palm sugar or 1 tablespoon of brown sugar also works
– the juice of one lime
– 1/4 cup fish sauce
– 1/4 cup of water
– 1 tablespoon rice wine vinegar
– 1/2 a stem of lemongrass, white part only, chopped finely
– lebanese cucumber, sliced and diced finely
1. Combine all ingredients bar cucumber in a bowl, combine well.
2. Chill until needed. Add cucumber last minute 🙂
– Makes about 3/4 of a cup – great with rice paper rolls, spring rolls, wontoms, dim sims
