Roast Chicken, Pear & White Wine Risotto

This venture started out wondering what to do with my left over wine. and spotting some chicken in the freezer the cogs began to churn from then.

One chicken breast.

1TBS Butter

3/4 cup Arborio rice

1L chicken stock

1 cup White Wine (i used a sweeter wine it teams well with the sweetness of the pear)

Two pears

10 cherry tomatoes

A small handful of snow peas cut into thirds


**Preheat oven to 200 degrees**

Cut the Cherry tomatoes and put on an oven tray with the chicken breast.

cover chicken and tomatoes with olive oil and put in oven for 30 mins.


Peel and cut the pears into cubes.

Pour the chicken stock and the wine into a saucepan. and set to simmer

Add the rice to a frying pan and melt the butter into the rice.

Add the stock mixture half a cup at a time. stirring and agitating the rice as you go.

After the chicken’s cooked cut it into slices and add to the rice mixture with the tomatoes

Add snow peas and the cubed pears.

Mix in the parmesan cheese and serve.

Next time i’ll add some baby spinach.
